A Oi – Tales of Flavors and Seasons

There are flavors that reside in memory—in an old kitchen, in the first rains of the season, or in a sudden, nameless longing for home.

Born of these memories, *À Ơi – Chuyện Vị, Chuyện Mùa* (À Ơi – Tales of Flavor and Season) was launched by Madame Lam as a storytelling journey through Vietnamese cuisine. Each chapter unfolds new stories about ingredients, the changing seasons, the people involved, and the cultural values woven into every flavor.

Going beyond the dishes themselves, *À Ơi* seeks to tell the stories that lie behind them—stories of memory, of the seasons, of the artisans, and of how Vietnamese flavors are passed down through generations.

CHAPTER 1 – UNVEILING SEASONAL FLAVORS

“Unveiling Seasonal Flavors” marks the inaugural chapter of the *À Ơi – Stories of Flavor, Stories of Season* journey at Madame Lam—a place where the narrative of precious seasonal produce unfolds through an emotionally resonant menu.

This is far more than a mere dinner; it is a meeting and a dialogue between two chefs: Chef Nguyen Nhu Cuong of Madame Lam and Chef Daniel Nguyen of Mia Saigon. Two individuals, two creative spirits, and two distinct culinary perspectives converge to tell a shared story of “Vietnamese flavors.”

Through the collaboration of these two kitchens, familiar ingredients are reimagined from fresh angles—infused with creativity and the chefs’ unique signatures—while still preserving the soul, memories, and intrinsic values of Vietnamese cuisine.

From this encounter, “Unveiling Seasonal Flavors” opens the first chapter of *À Ơi*—a journey where every dish is not only meant to be savored but also serves as a medium to tell stories about the seasons, the flavors, and the narratives lying at the heart of Vietnamese cuisine.

CHAPTER 2 – A TASTE OF GRATITUDE

Following the inaugural chapter, *À Ơi* returns with “A Taste of Gratitude” (*Thắp Vị Mùa Ơn*), inspired by the Vu Lan season and the spirit of thankfulness.

This time, the narrative unfolds through a meeting between Culinary Artisan Nguyễn Dzoãn Cẩm Vân and Chef Nguyễn Như Cường, as they collaborate to craft a menu featuring California Walnuts.

If “Opening the Flavors of the Season” (*Mở Vị Thời Trân*) marked the first step into the world of *À Ơi*, then “A Taste of Gratitude” serves as a reminder of appreciation—for the land and sky that yield the harvest, for the ingredients that define the flavors, for the artisans who have dedicated their lives to preserving their craft, and for the generations continuing the story of Vietnamese cuisine.

Two chapters, two stories, two distinct seasonal flavors—yet they converge on a shared purpose: cherishing Vietnamese values and retelling them through the language of cuisine.

And the journey of *À Ơi*—Stories of Flavor, Stories of Season—continues.

For every passing season holds a story to tell, every ingredient evokes a memory, and every encounter can open a new chapter for the flavors of Vietnam.
